MAKING FELINO:
STEP 1
The skilled production process of Mezcal Felino begins with the fertile tierra roja of our fields, which gives life to our agaves azules. It is here they are planted and cared for by the jimadores of our region for approximately 7 years (the time it takes our plants to reach their optimum maturity).
STEP 2
When the agave reaches maturity, the jimador shaves its spines and harvests it from the earth. It is at our distillery, named "Los Horconcillos," we recieve these shaved cabezas of the agave and cook them in either our modern autoclaves or our traditional brick hornos.
STEP 3
After cooking the cabezas, the juice is exracted by means of a crusher-juicer and then prepared for fermentation, which lasts approximatley 3 days.

STEP 4
After the juice is fully fermented, the distillation process begins. It is distilled a first time to allow seperation of the natural elements of the agave and the alcohol. The end product is the ordinario, which is distilled a second time to produce our pure mezcal. This is the last step in the process for our Silver product.
STEP 5
The twice-distilled mezcal is either bottled for sale (our Joven Silver product), or aged in American white oak barrels for a minimum of 2 months. It is this aging process that provides our Reposado and Anejo products with their characteristic flavor and color, all the while regulated and certified by the Consejo Mexicano Regulador de la Calidad del Mecal (COMERCAM). |
